Salsa de Chipotle Recipe

6 medium sized tomatoes
1 T vegetable oil, plus 1 t for pan
1/4 onion, chopped
2 garlic cloves, minced
2 T cilantro, chopped
1-2 chipotle chilies in La Moreno Adobo (or any brand will do)-caution very spicy!

Preheat oven to 350 and roast for 1-1.5 hours (or buy can of fire roasted tomatoes if in a hurry). Cover baking sheet with aluminum or non stick surface for easier clean up. In medium saucepan, sauté onion and garlic until golden brown; set aside. When tomatoes are ready, put them in blender. Add onions, garlic, cilantro, and chilies. Blend on slow speed and add salt to taste. Gradually increase speed while adding oil; process until smooth. Serve with tortilla chips or on your favorite mexican dish! This salsa is so delicious and very unique.
