If you are thinking Cyrus is holding a tennis or badminton racket in his hand AT the dinner table, you are wrong. This is his new “Insecta Electrocuter” ( I’m calling it) toy he’s been fending off food nabbers with tonight. This contraption came out of nowhere and was pleasantly presented at dinner this evening to top off the lovely meal.
Bombay Chicken Curry Pasta
chicken, cooked & chunked
Orecchiette pasta (preferred), cooked & cooled
celery, sliced & chopped
salt & black pepper (or crushed red pepper)
Firstly, mix about 1.5 cups of yogurt, 1/2 teaspoon or less of cinnamon, with about 2 tablespoons curry powder and about 1.5 tablespoons honey, set aside. Soak about 3/4 cup of raisins in water while preparing preferred amount (maybe 3/4 cup of each) of celery and scallions. Cook half a box pasta for about 5-6 generous portions, add T olive oil, set aside. Chop and cook chicken in skillet with olive oil or butter, seasoning with salt n pepper.
Then lightly toss cooled chicken & pasta, scallions & celery, drained raisins, with the yogurt mixture; salt & pepper to taste . **Add more honey if not sweet enough Refrigerate or let set until all cooled and flavors marry. I like to serve this pasta cool, but you can try it warm if you prefer.
Amy’s Smörgåsbord (Oatmeal, Coconut, Pecan, M&M, Chocolate Chip) Cookies
1/2 c light brown sugar
1/2 c sugar
2 eggs, beaten
1 t vanilla
1/2 c butter
1/2 c crisco
1.5 c flour
1 t salt
1 t baking soda
2.5 c quick 1 minute oats
1 c coconut
1/3-1/2 c pecans and/or raisins (optional)
1/2 c milk choc mini M&Ms
1/2 c semi sweet chocolate chips
Preheat oven to 350 degrees. Mix first 6 ingredients until fluffy. Mix next 3 dry ingredients, and add to wet mixture. Then stir in the rest of the goodies until well mixed and drop dough onto nonstick cookie sheets. Bake for 6-7 minutes depending on size of cookies. **The key to these cookies is to not overbake.** The bottoms of cookies should barely be golden; the tops may look a little undercooked but will set up after they are removed off of cookie sheet to cool. Makes up to 48 cookies. These are one of my top two favorite cookies!
