The Perfect Whipped Cream
1.5 c heavy whipping cream
2-3 T confectioners sugar
1 t vanilla extract
Whip the cream in chilled bowl with chilled beaters until it thickens. Then add the powdered sugar and vanilla, whipping until soft peaks form. Le voilà!
4 eggs, lightly beaten
1 1/3 c milk, (unsweetened almond milk is nice!)
1.5-2 T butter, melted
2 T sugar
1/4-1/2 t salt
1 c flour
Whisk eggs, milk, butter, and remainder of ingredients until smooth. Heat a medium to large skillet or crepe pan over medium heat & add about 2-3 T batter (tilt pan around to make the thinnest possible layer just to cover bottom & sides of pan). Cook about 2 minutes on each side or until golden brown. Then add preferred filling (popular fav is Nutella or raspberry confit) AND freshly whipped cream, slightly wrap or fold. Enjoy as dessert—add ice cream in that case—or even a healthy meal;)!
