Butter Beans and Chocolate Malt Lunch

Butter Beans (Lima)

Soak the bag (1lb.) of beans 6-8 hours, then rinse and drain

Add about 6 cups of water and beans to a large pot

1 T butter

salt (easy with salt since bouillon contains a lot) and pepper

1 T chives

1-2 T dried onions

4 chicken bouillon cubes

1 t oil

a few sprigs of rosemary and sage (opt)

**Grandma Nanaw would say, “add some bacon grease.”  That was often a common ingredient in a lot of her recipes, but I never have it on hand darn-it, so I use bouillon cubes instead;)

Cook 2-3 hours until desired softness.  These are very good served with ritz crackers too!  Makes 4-5 servings.

This meal was a tribute to my recent late grandparents.  I will always love, miss, and think often about my Nanaw and Mop Mop and all the dear memories we shared.  Grandma loved her butter beans and grandpa his chocolate malts…and we sure did as well.

Amy’s Layered Salad Dip

1/2 bar low-fat cream cheese and 1/2 cup light sour cream, stirred until smooth = bottom layer

Sprinkle 1-2 t of each of these spices/herbs over this bottom layer: paprika, hidden valley, chili powder, chives, and dried onions

1 can of black beans, drained is layered next

Over this layer sprinkle favorite flavor of Cholula to desired heat factor; I used all three: chili garlic, chili lime and regular–but who else would have all three flavors in pantry at once besides us?!

2-3 ripe (homegrown preferred) tomatoes, chopped & salt n peppered; 1/4 red onion, diced; t garlic, minced; and 1-2 t dried cilantro is next layer **save one tomato for top layer

3/4-1 cup shredded cheddar or Mexican cheese

1 handful of black olives, chopped to make next thin layer

top that off with fresh dill or your choice of fresh herb

lettuce and avocado, lastly

When ready to serve, add the lettuce (to fill to top), sliced and diced avocado, remainder tomato chopped, Cholula and salt & pepper for final layer as topping.  If storing until the next day, wait on the avocado and lettuce until serving time.  I served Tostitos Artisan Recipes Roasted Garlic & Black Bean chips with this…yuuu-mmy.
