…to picnic at Snyder Lake in Glacier on this miniature rock island was definitely well worth our Saturday. Cyrus accidentally kicked our picnic trash into the water while trying to swat off mozzies, so he had to go wading in the cooold water to catch it and keep from littering. Minus the aggressive mozzies, it was a perfect day!
Then post hike dinner after our aperitif of Sweet Peaks ice cream, yes again. Unfortunately there are “Sweet Peaks” (oh, pun intended) all over this area. It’s all so irresistibly delicious!
Onion Potato Zucchini Frittata
Serves two
6 eggs (half egg whites)
1 zucchini, chopped
1/4 red onion, diced
1/4 white onion, diced
5 red or yukon potatoes, cubed
deli smoked turkey, torn
1 scallion for topping, diced
cherry tomatoes for topping, sliced
about 3/4 cup cheese for topping, shredded
1 T olive oil or butter
salt and pepper (s&p)
Pre boil cubed potatoes til tender. Pre-heat oven to 350. Saute white and red onions in large non stick skillet til soft in oil or butter. Then add turkey, diced zucchini, potatoes, and s&p. Whisk eggs well, s&p, and add to mixture while on medium heat about 4-5 minutes cooking the eggs almost fully. Then remove from heat and add tomatoes, scallions, and shredded cheese. Pop into the oven for about ten minutes. Serve with sliced avocados, sour cream, and salsa on top for optimum deliciousness!
