Pumpkin Cookies
1 c. butter, room temp
1/2 c. sugar
1/2 c. brown sugar, packed
Mix well until light and fluffy
Then add next three ingredients to first mixture:
1 c. canned pumpkin
1 egg
1 t. vanilla
Mix the dry ingredients below and gradually add to above mixture:
2 c. flour
1 t. baking soda
1 t. baking powder
2 t. cinnamon
1/4 t. salt
*Pecans in mixture optional or press a few on top just before baking
Drop dough by tablespoons about 1 inch apart. Bake at 350 degrees for 10-13 mins depending on how soft and moist you prefer them, at least until golden brown edges.
