Wagon Wheel Spinach Vodka Sauce Pasta
2-3 c. spinach
4 cloves Garlic
1 jar vodka sauce
wagon wheel pasta shells
1 c. cottage cheese
1-2 c. 2% mozzarella (or italian cheese preferred), shredded
1 T Olive oil
Fresh basil, Italian seasoning, or oregano on top
Cook pasta; set aside. Sauté sliced or diced garlic with olive oil until soft. Add spinach to pan just until barely wilted and remove from burner. Add to casserole pan as first layer.
Then cover with half of cheese and add a thick layer of pasta. Pour whole jar of pasta sauce on top. Finally, finish it off with three generous strips of cottage cheese slightly spread around and sprinkle with remainder of cheese, herb of your choice, sea salt, and pepper. Bake for 20-30 mins on 350, and serve immediately.
