This is a shrimp cocktail with some salmon bites. I threw together these fancy bits of goodness using Dill Triscuits, gravlox (smoked salmon), crème fraîche (or sour creme), slivers of orange or yellow bell pepper and red onion, with arugula and capers on top with a squeeze of fresh lemon juice
Refreshing Cold Nachos
I used spicy tortilla chips, a dollop of sour cream on half and guacamole on the other half. Then I sprinkled shredded cheddar and Dean Fearing’s seasoning (chili powder or taco seasoning will do too) on top. I finished it off with chopped scallions, a half of a cherry heirloom tomato and voilà! A fresh thin jalepeno slice would add a nice zing to these if you like to spice things up a bit.
