Asparagus Frittata 5 eggs, scrambled
5 asparagus, chopped
3 green onions, chopped
1/2 red bell pepper, chopped
7 organic cherry tomatoes, halved
1/4 cup cheddar, shredded
A couple splashes of milk or cream
Herbs of your choice

Pour all together in hot skillet for a minute to let slightly cook. Then cook in oven on 380 degrees for about 15-20 minutes. Garnish with arugula.
Yukon and red new potatoes, chopped in medium chunks
garlic, fresh or freeze dried
Drizzle all with oil then bake on 380 degrees for about 20-25 minutes.
