What a deliciously healthy meal made fresh from the local farmers’ market!
Garlic roasted potatoes, beets, carrots…
..with honey goat cheese and fresh tomatoes
I served this with zucchini and onions cooked on the stove in butter with Herb de Provence. I learned to cook these vegetables Provençale style from my lovely French friend Stephane. Thanks to his native cooking (& teaching!) skills, I can enjoy this even without him living near. Although it’s much more fun cooking with him, I still enjoy this very much. Furthermore, the smell of the Provence herbs is a nostalgically wonderful aroma.
