Browned Butter Banana Bread

Browned butter makes everything better!  I made this as a Labor Day treat, and it turned out deliciously.  I have been wanting to make banana bread and thought why not incorporate my browned butter technique and bake it in a bundt!  It was a lovely addition, and for hours the nutty aroma filled the room followed by the smell of nutmeg and bananas.

Browned Butter Banana Bread

6 ounces butter, melted and browned

2 cups all-purpose flour

3/4 cup sugar (equal parts: 1/2 brown sugar, 1/2 white sugar)

1 teaspoon baking soda

1/8 teaspoon salt (optional with salted butter)

3/4 teaspoon ground cinnamon

1/2 teaspoon freshly grated nutmeg

2 large eggs

1/4 cup buttermilk

1 teaspoon pure vanilla extract

3-4 medium bananas, mashed

Place a rack in the center of the oven and preheat to 350 degrees F.  Butter and flour a pan and set aside.

Melt butter in a saucepan over medium heat.  Butter will begin to foam and crackle as it melts.  When the crackling subsides, the butter will begin to brown.  Swirl the pan as the butter cooks being careful not to burn.  When the butter browns and begins to smell nutty, immediately remove from the burner and transfer to a small bowl.  Set aside to cool.

In a large bowl, whisk together all of the dry ingredients.

In a medium bowl, whisk together eggs, vanilla extract, and buttermilk.  Whisk in the mashed bananas.  Finally, whisk in the slightly cooled browned butter.

Add the wet ingredients, all at once to the dry ingredients.  Fold together, making sure to scrape the bottom of the bowl incorporating all the flour mixing ingredients without over-stirring.

Spoon batter into prepared pan.   Bake for 35 to 40 minutes, or until a skewer inserted into the center of the loaf comes out clean.  Remove bread from the oven and allow to rest in the pan for 10 minutes.  Then invert onto a wire rack to cool completely.

Bread will last 4 days, well wrapped at room temperature.  Icing the bread just before serving.  This will also freeze well.


Maple Drizzle

2 cups powdered sugar

2 Tablespoons cream or buttermilk

2 Tablespoons pure maple syrup

1 teaspoon pure vanilla extract

Mix all ingredients until smooth and the right consistency/thickness preferred.  Drizzle over slightly cooled banana bread.
