Rustic Browned Butter Apple Pie

This time of year reminds me of my love for fall recipes.  Lately my time in the kitchen has been spent creating new fall treats.  Here is one I came up with for my guest all the way from Sweden for her last night in town.  We were in the kitchen over 4 hours (she pointed out, haha)!  I said, “that’s how it is every time I come to my parents for a visit.”  My mom and I are always cooking…it is our favorite past time.  Pernilla (my Swedish guest) has yet to share that same passion.  As a newlywed and housewife in Chicago, she now has an abundance of time to hone her cooking skills and fatten up her husband.

Apple Pie Filling

5 apples, peeled and sliced in wedges

3 T Flour

1/2 c white sugar

1/2 c brown sugar

1/8 t salt

1 t nutmeg

1 t cinnamon

1 t apple pie spice

juice of  1 lemon

3/4 c browned butter

Pre-heat oven to 350.  Brown the butter in a pan over medium heat watching closely stirring and moving around until foamy and brown specs start to form.  The wonderful nutty aroma should fill the room about now 🙂  Remove and set aside cooling quickly so it doesn’t over heat.  Mix all dry ingredients together, pour over apples, and stir.  Then stir in lemon juice over apple mixture.  Pour slightly cooled browned butter over the prepared bowl of apples coating and tossing well.  Then dump into slightly cooked pie shell (pricked and pre cooked for 6 minutes before adding apples).  Then bake at 350 for about 45 minutes adjusting oven temperature if needed in order not to over-bake pie crust.  Cook down until pie is juicy and bubbly when apples look evenly softened.


 Haagen-Dazs Tres Leches was a good addition for Apple Pie a la mode.  I would choose vanilla next time to prevent masking the spices in the pie.  This was all I had on hand.  The addition was still a nice arousal of the taste buds!
