This dinner blew me away especially with how quick and easy it was to make. I made one marinade and used it for the salmon and the vegetables. I marinated the salmon in half the soy honey mixture and saved the rest to drizzle over the vegetables for roasting. I roasted the veggies and salmon on 350 for 15 minutes. Then essentially broiled it all for 5-6 watching to see that the salmon was just caramelized. Here is the recipe to break it down:
Honey Sesame Garlic Salmon (serves 2-3)
Total time: 30-40 minutes
- 3 T sesame oil
- 3.5 T honey
- 5 T soy or shoyu sauce
- 5 T rice vinegar
- 4-5 cloves minced garlic
- 2 pinches of ginger or 1 t fresh ginger, chopped
- 2 cuts of salmon or one filet
Prepare the marinade by whisking together first 6 ingredients. Place salmon skin down in oven safe dish. Pour half (reserve some for veggies) of marinade over salmon and leave to soak up all the goodness in the fridge for 45 minutes to an hour.
Bake at 350 for 15 minutes with veggies in separate pan. Take salmon out after 15 minutes and turn oven on Broil. Remove salmon skin and pour off the marinade into small sauce pan to reduce for the glaze. Place salmon back in oven to broil 5-6 minutes for the final caramelized touch.
Rice Noodles and Broccoli – Bell Peppers
- 8 ounces thin rice noodles, prepared according to package
- 1 large yellow or orange bell pepper, cut into medium slices or chunks
- 2 heads of broccoli, cut into florets
- Optional: scallions and sesame seeds for presentation
- Marinade from salmon—prepared above
While salmon is marinating prepare the vegetables and place on foil covered oven safe pan. Drizzle the rest of the marinade over broccoli and bell peppers. Roast in oven with salmon on 350 for 15 minutes.
At this point the noodles can be prepared.
When salmon is broiling for 5-6 minutes at the end, I keep the veggies in for an extra crisp. Serve with a generous scoop of noodles, then veggies second, all topped with salmon. **I like to cut some scallions on a bias and sprinkle (black) sesame seeds over it all.
